Venezuela Arepa Recipe (2-3 Arepa)
Ingredients
* 1 cup warm water
* 1cup pre-cooked corn flour like Harina P.A.N. (slightly less than 1/2 cup)
* ½ teaspoon salt
* 2 teaspoon oil or butter (optional)
Instructions
1. In a bowl, mix the warm water and salt.
2. Slowly add the corn flour while mixing with your hands or a spoon.
3. Let it rest for 2–3 minutes so the flour absorbs the water.
4. Knead gently until smooth.
* If too dry → add a tiny splash of water
* If too sticky → add a little more flour
5. Shape into a thick disk about 1/2 inch thick.
Cook
* Heat a pan over medium heat with a little oil.
* Cook about 5–7 minutes per side until golden and crispy.
* Optional: finish in the oven for 5 minutes so the inside gets fluffy.
For the reina pepiada filling
*1 cooked chicken breast, shredded
* ½ an avocado
* 2-4 tbsp mayo (I put more I love Mayo big time)
* 2 tsp onion powder
* Squeeze of lime
* Salt + black pepper to taste
* Cilantro
Mash avocado and mix with:
* shredded chicken
* mayo
* onion powder
*mustard
* lime
* salt and pepper
3. Slice the arepa halfway open and stuff generously with the reina pepiada filling.
