Hot Cross Pani Popo?! 🤯🙌
500 g self-raising flour
7g instant yeast (1 packet)
75g sugar
1.5 tsp ground cinnamon
Pinch or 2 salt
250ml warm milk
50g butter melted
1 large egg
150g raisins/sultanas
Zest of 1 orange
Cross:
-3 tbsp plain flour
-3 tbsp water
Sauce:
-1 can coconut milk
-1 Can coconut cream
-1 can sweetened condensed milk
-Mix warm milk with 1tbsp of sugar and stir in the yeast. Leave 7 mins til foamy
-In a large bowl, combine self-raising flour, sugar, cinnamon, salt, sultanas and orange zest. Stir well
-Pour in the foamy yeast mixture, melted butter, egg. Stir until a shaggy dough forms.
-Tip onto heavily floured benchtop & knead for 5 mins until smooth. This may require additional flour if too sticky but dont add too much!
-Place in a greased bowl, cover & let this proof (rise) somewhere warm for 1-1.5 hours til doubled in size
-Punch dough to remove air & divide into 8 equal pieces (I use scale)
-Shape each into a ball and place them into greased baking dish, cover & leave to proof again for abt 40 mins while we make sauce & paste for the cross
-Preheat oven 175 fan bake (celsius)
-Make sauce by combining all cans & mix well. You can replace condensed milk can for some sugar. Taste the sauce & adjust to your own preferences!
-Make the cross paste by using equal parts flour & water. You want it thicccc like toothpaste consistency. Practice controlling your piping on something before starting on the actual buns LOL
-Draw crosses on the buns
-After proofing buns add sauce to abt halfway covering buns. Gently brush sauce on top of buns so as to not ruin crosses.
-In the oven for 15 mins then top up with sauce and go for another 15-20 mins
-Serve with additional sauce & orange zest
