They serve popular griddle-cooked dishes like hamburgers and dashi-maki tamago, so cleaning the large iron griddle is quite a task!

I got to watch them make the dashi-maki tamago right after cleaning the griddle! They use a huge block of ice to scrub the surface until it gleams. The resulting omelet was packed with two whole portions of mentaiko; the combination of the spicy kick and the rich egg flavor was absolutely exquisite!
