RECIPE: (Makes 2)
Ingredients:
-100g Plain flour (abt ¾ cup)
-½ tsp baking powder – ½ tsp
-Pinch of salt
-100 ml water – 100ml (mixed with 1 tsp dashi stock if you have)
-1 egg
-200g cabbage (about ¼ medium cabbage) finely chopped
- Green onion – 1–2 stalks, sliced
-3 tbsp grated cheese
-4 slices of thinly sliced pork/bacon (or any protein)
Sauce:
-3 tbsp worcestershire sauce
-2 tbsp ketchup
-1 tsp soy sauce
-1 tsp honey
-In a large bowl add plain flour, baking powder and salt. Stir to combine (with saibashi if you have) otherwise some chopsticks
-In a small bowl whisk water & dashi together. Add egg and whisk again
-Combine wet ingredients to dry ingredients in the large bowl and mix together
-Add cabbage, spring onion & cheese. Stir to combine once again
-Make sauce by combining all ingredients and mixing well. Taste & adjust sauce to your taste.
-Heat a tbsp of oil in frying pan to medium high and add in half of the mixture to form a circular shape about 2-3cm thick
-Cook for 4-5 minutes until browned on bottom
-Add 2 strips of bacon on top of the ‘pancake.’ Insert 2 spatulas carefully under each side. Lift pancake carefully and move it away from you towards the back of the pan, before flipping it carefully over toward yourself and back into the centre of the pan
-You may need to add a splash more oil here before covering with a (ghetto) lid and cooking for 4-5 minutes more until bacon is cooked
-Spoon the sauce over the okonomiyaki and top with kewpie mayo, spring onions and any other toppings
