Pisua Recipe
Ingredients:
• 800g of tapioca pearls
• 1 can of coconut cream
• 250mls of fresh cream
• 2 cups of raw brown sugar
Instructions:
1. Soak the Tapioca Pearls:
• Soak the tapioca pearls in warm water for 3-4 hours. Ensure the water covers the pearls with an extra gap above the pearls so they can soak properly. After the time is up, the pearls should be soft and falling apart.
2. Prepare to Bake:
• Preheat the oven to 180°C.
• Transfer the soaked pearls and all the water into an oven-proof pan (make sure it’s a large one).
• You can line the pan with baking paper for easy cleanup.
• Cover the pan with foil and bake for approximately 1 hour. The pearls should soak up all the remaining water and become clear when cooked.
3. Make the Sauce:
• In a separate pot, melt the raw brown sugar on low heat. Stir occasionally to ensure it melts evenly.
• Once the sugar is fully melted, add about 2 tablespoons of water and mix well.
• Gradually add in the 250ml of fresh cream, stirring until fully combined.
• Slowly pour in the can of coconut cream, mixing it all together until the sauce is smooth.
4. Combine the Pearls and Sauce:
• Once the pearls are cooked and clear, scoop them out little by little using a fork and spoon and add them to the sauce, stirring gently to combine.
5. Serve:
• You can serve the Pisua straight away or refrigerate it for the next day. The texture thickens over time and tastes even better the next day!
