🇫🇯 🐟Fijian Fish Curry Lolo
Ingredients
-750g sword fish cut into chunks
-½ C ghee
-1 tsp mustard seed
-1 tsp cumin seed
-1 tsp fennel seed
-Handful of curry leaves
-1 large onion sliced
-4 cloves garlic (ground)
-1 thumb-sized piece ginger (ground)
-3 red chilies (ground)
-1 tsp black pepper corns (ground)
-3 lime leaves
-1 large tomato chopped
-1 tbsp sugar
-1 tbsp tomato paste
-1 “Fijian tbsp” Fiji Style curry powder
-1 can coconut milk
-½ can of water
-Juice of 1 whole lemon
-Handful coriander
-Salt
Method
-Prep all ingredients
-Heat ghee in a large pan
-Add seeds and let them sizzle for 1 min
-Add sliced onion & fry for 3 mins
-Cook until fragrant and softened
-Add curry leaves
-Stir in chopped tomatoes and tomato paste
-Add lime leaves & freshly ground spices (chilli, garlic & ginger)
-Stir thru and then add curry powder, sugar and a good hit of salt
-Mix thru and cook for 2 mins
-Add coconut milk and water
-Add juice of 1 whole lemon
-Stir until smooth
-Cover with lid & bring to a gentle boil
-Once bubbling add coriander & turn down to a simmer
-Add fish directly into the curry sauce.
-Simmer gently until cooked through (abt 10 mins)
-To serve- spoon over white rice & eat with your hands!
