A Burger Inside a Burger Bun?!
800g mince
1 egg (whisked)
½ C bread crumbs
1 tsp beef stock powder
½ tsp salt
½ tsp curry powder
½ tsp onion powder
½ tsp paprika
Pinch of white pepper
DOUGH
500 g plain flour
1 packet of instant yeast (7g)
1 cup of warm milk (250ml)
2 tbsp of sugar (24g)
Pinch of salt
60g melted butter (or sub cooking oil)
1 egg
-1 Egg for egg wash
-Garlic Aioli as dipping sauce
-Bagel seasoning (or sesame seeds for topping buns)
-Sliced cheese
-Pickles
-Tomato Sauce & Mustard
Method:
Warm milk (finger-comfy), mix in sugar + yeast. Rest 5 mins till frothy.
In a bowl add flour, salt, egg, butter + yeast mix. Stir, then knead 5 mins till smooth. Cover + rise 1–1.5 hrs till doubled.
Mix mince with all seasonings, egg + breadcrumbs. Divide into 8, form patties + sear on high heat (just for colour). Cool.
Punch dough, divide into 8. Keep covered. Roll into balls, flatten, then roll into circles (~0.5cm thick).
Preheat oven to 180°C.
Assemble: cheese, patty, toppings, sauces, more cheese.
Seal dough tightly over filling (don’t be shy—pinch it like it owes you money). Flip seam-side down, gently shape.
Place on lined tray, cover + proof 10–15 mins.
Brush with egg, top with seeds (bagel seasoning = elite).
Bake 20–25 mins (keep an eye on ‘em).
Brush with butter for that glossy finish—this is NOT optional bro.
